Will this ship fresh?. How long have it been sitting in the store?

We would have no idea how long popcorn sits on the shelf before delivery unless you contact the company directly. I am assuming it's made fresh for each delivery because I have ordered several times, nearly twice a year, and mine always tasted great.

Is the amount of ounces listed on the tin?

We don't like the ounces on the tin as it differs by the weight of the popcorn, but the total volume of popcorn tin is 1-gallon.

Does this have some sort of Mushroom kernal?

We use the mushroom kernel for our popcorn. It is also known as the gourmet popcorn kernel. There are no mushrooms in this kernel. It is just a descripted of how this kernel pops which is like a big ball. Thank you, Eric @ Signature Popcorn.
