I bought this package local and it had only 4g of carbs and 5gof fiber with 10g of protein. Is this one the same?

I would say that yours might not be the protein bread or they've changed their recipe or label. my label for protein bread lists 12g carbs, 5g fiber, 10 g protein.

What is the shelf life of this bread (intact in their closed plastic pockets)?

I keep this bread for two months without a fridge, between shipments, with no problems. My opened packages are refrigerated

If there's no preservatives how does it last 90 days at room temperature

When I take it out of the freezer it only last 4 to 5 days and it molds that tells me no preservatives

Does anybody know what PH the bread has?

I do not. But it contains no preservatives, kosher= K-PARVE, wheat free, natural ingredients, long shelf life, 0 cholesterol.
