Can this buckwheat flour be used for cookies, muffins etc. and does it have to be mixed with other flours for the recipe to work?

Buckwheat can be used for baking coffee cake, buttermilk pancakes, chocolate cake, cookies, etc. without mixing with other flours. Here is the recipe for Peanut Butter Cookies3 cups Acadian Light Buckwheat Flour2 tsp. baking powder1 tsp. salt1 cup (2 sticks) unsalted butter softened1 cup creamy or chunky peanut butter2 tsp. vanilla1 cup packed brown sugar1 cup sugar2 large eggsPreheat oven to 350 degrees. Combine buckwheat flour, baking powder and salt. In a large bowl, beat butter, peanut butter and vanilla until well blended. Add both sugars and beat. Combine half the dry ingredients, add the eggs, one at a time, beat in the remaining dry ingredients. Roll cookies into 1 1/2 inch balls and set 2 1/2 inches apart on cookie sheet. Press tops with the back of a fork. Bake approximately 15 minutes or until lightly brown. Makes 3 dozen.

This is not listed as organic do the growers use glyphosphate or other herbicides or pesticides to produce the buckwheat?

I want to use it for Soba Noodles, which requires a very fine, clean buckwheat flour with no husks or hulls: fine and clean.  Is this like that?

I used this flour to make noodles today. When mixed with some salt, egg, and water they made a good linguine but my pasta maker couldn’t extrude fine noodles like spaghetti, or even thick ones — like soba — well. The result was that they were rather dry and brittle. After boiling for 2-3 minutes the linguine style ones were nice and chewy and had a nice, kind of nutty/wheat-y whole grain flavor. However they were not brown, which is what I was expecting.

What is the list of ingredients for this product? Does it contain wheat flour?

This particular listing is just plain buckwheat flour. It's grown in isolated fields and processed on dedicated equipment. Check out their website for more information about this gluten free product.

Side note: Last I'd heard, Bouchard Farms also sells a ploye mix which contains wheat flour, salt, etc added to the buckwheat, if that's what you're looking for. This one is obviously not gluten free, haha.
